Essential oils are the volatile components of plants. They are usually obtained by Steam Distillation of the whole plant, flowers, leaves, roots and seeds etc. Some citrus oils are obtained by cold expression of their peel and are a by-product of the juice manufacture.

Plants produce essential oils for many reasons. Some of the reasons include attracting insects for pollination, to cool the plant in hot conditions, to fight infection or as a by-product of its normal metabolism.
